What’s for dinner…
Main Dish:Lighter Eggplant ParmesanJordan loves Eggplant Parm and I have never eaten it. I wanted to surprise him by making it, plus I was curious about eggplant. I went strolling the internets to find a recipe and I found one of my favorite sites: SkinnyTaste. It took almost a 2 hours to make this dish (on a 90 degree day in a house with no AC…silly me). You kind of put it together like a lasagna. I have had only one experience with lasagna, and it was horrible. However, I attempted to follow the instructions, and it was totally worth it. It was cheesy and delicious. I think the key was letting the eggplant strain before cooking them, and letting it set for ten minutes after baking. I can’t wait to eat leftovers.Recipe found here. 
Side Dish:Roasted Frozen Broccoli Since the main dish was so extensive, I decided to do something EASY. I put some frozen broccoli and fresh cherry tomatos on the same pan I had used to bake the egg plant (I am always a fan for less dishes). Sprayed them with some Pam and added salt. I followed a pretty generic recipe. They were an easy and perfect match for the main dish. This will be a fall back for many dinners to come. Recipe found here.
